These cookies are a deliciously fudgy way to get some protein in after a workout.
They're also a great option if you want a chocolatey treat without a sugar crash. They're super simple to make and no baking required!
To make the cookies, I used a mixture of protein (Bare Blends whey protein isolate), slow release carbs (oats) and good fats (brazil nuts and coconut oil) to keep the cookies balanced and satisfying. I keep them in the fridge and pop one in my gym bag when I'm heading to training to eat afterwards.
I find that having some protein and carbs straight after training (usually in the car on the way home) replenishes my body and keeps me going until I get home to make a healthy meal.
- Process the brazil nuts, protein powder, oat flour, cacao powder and salt in a food processor until you get fine crumbs. Add the remaining ingredients and process until the mixture comes together. Add a little extra water if the mixture is too dry.
- Line a tray with baking paper or cling film. Roll the mixture into 14 balls and press each ball onto the lined tray to form the cookies. Leave the cookies in the fridge to firm up. Dust with extra cacao powder to serve if desired.
- The cookies will keep in the fridge for a week, or you can freeze them.
