Mash up your bananas in a big mixing bowl using a fork, then simply add all the other ingredients (including your pre-made oat flour) & mix well.
Heat a frying pan with a tbsp of coconut oil then add a large heaped tbsp of your batter into the pan and carefully press down to form the shape of your pancake. The protein pancakes take about 1 min on each side depending on the heat. If it gets too hot turn the temperature down to stop them from burning. Add more oil as needed to avoid them sticking to the pan – you can make more than one at a time in a larger pan and keep them warm in the oven at a low temperature of 100 degrees C.
Mix all of the chocolate sauce ingredients together and slowly add cold water in tiny amounts until you reach your desired consistency.
Serve your pancakes with the chocolate sauce, a dollop of greek or coconut yoghurt and some yummy fresh seasonal fruit.
