Naughty Health Protein Pancakes

STEP 1: OAT FLOUR

Simply whizz 1 cup of dry oats in your food processor or blender until they turn into an oaty flour.

STEP 2: THE BATTER

Mash up your bananas in a big mixing bowl using a fork, then simply add all the other ingredients (including your pre-made oat flour) & mix well.

STEP 3: TURNING THEM INTO DELICIOUS PANCAKES

Heat a frying pan with a tbsp of coconut oil then add a large heaped tbsp of your batter into the pan and carefully press down to form the shape of your pancake. The protein pancakes take about 1 min on each side depending on the heat. If it gets too hot turn the temperature down to stop them from burning. Add more oil as needed to avoid them sticking to the pan – you can make more than one at a time in a larger pan and keep them warm in the oven at a low temperature of 100 degrees C.

STEP 4: NUTTY CHOCCY SAUCY BIT

Mix all the above ingredients together and slowly add cold water in tiny amounts until you reach your desired consistency.

STEP 5: PAN TO PLATE

You can enjoy these delicious protein pancakes in a number of ways. I like to have them with my nutty choccy sauce (above) a dollop of greek yogurt or coyo & some yummy fresh seasonal fruit.
