This decadent yet healthy peanut butter fudge recipe is one that’s hard to resist. Very easy to make, you can create this treat in about ten minutes, and it will set in the fridge within two hours, with minimal heating required and fuss free. This fudge can be stored in the fridge for up to a month, but we doubt it will last that long.

Ingredients


  • 375 grampeanut butter (1 1/2 cups)
  • 50 gramBare Plant Protein (1/2 cup)
  • 150 grampure maple syrup (1/2 cup)
  • 105 gramcoconut oil, virgin or refined (1/2 cup)
  • 1 teaspoonpure vanilla extract, optional
  • 100 gramdark chocoolate (vegan optional)
  • 1 teaspooncoconut oil (optional)

Directions


  1. 1. Grease and line a small tray (I use a 20cm square one) with baking paper and set aside. If your coconut oil is solid you will need to melt it. Add to a saucepan and gently melt over a low flame, then remove from the heat and allow to cool to around 40 degrees. If you don’t have a thermometer just test with your finger. The oil should feel around body temperature.
  2. 2. In a large mixing bowl add all the ingredients except the dark chocolate and 1 tsp coconut oil. Use a wooden spoon and mix together well. Once uniform pour into the lined tray. Use a rubber spatula to ensure you scrape the entire contents of the bowl into the tray, then spread to make an even layer.
  3. 3. To make the optional chocolate layer bang the unopened chocolate bar on the bench to break it into small pieces, then add them to a heat proof bowl with 1 tsp coconut oil. Set the bowl over a pot of just simmering water, ensuring the bowl does not touch the boiling water. Melt gently over a low flame, stirring throughout. Once melted pour onto the peanut butter layer and set in the fridge for 2+ hours.
  4. 4. Once the fudge has set use a hot, sharp knife to cut into desired serving sizes. Store in an airtight container in the fridge for up to 1 month.
