Matcha And Coconut Chia Pudding
This recipe breathes new life into your standard (but much loved) chia pudding.
A refreshing take on the classic chia pudding. The addition of Matcha Green Tea makes this chia bowl perfect for an energising breakfast or delicious afternoon treat.
Because the chia pudding takes at least 20 minutes to set, you can make it the night before to be ready for breakfast first thing, or take it to work in a jar for a healthy mid-morning snack. You can also stir in a serving of protein powder for extra nutritious benefit.

Ingredients
- 5 tablespoon Organic Chia Seeds - Organic Chia Seeds
- 1 teaspoon Organic Japanese Matcha - Organic Japanese Matcha
- 180 millilitre boxed (not canned) coconut milk
- 3/4 cup coconut yoghurt
- 1 teaspoon pure maple syrup
- Crunchy Granola - Crunchy Granola - 350g
- Shredded Coconut - Shredded Coconut - 350g
- 1/2 cup berries
- seasonal fruit
- yoghurt
Directions
- 1. Add all the chia ingredients to a small bowl and mix well. Set for 20 mins in the fridge, stirring a couple of times throughout to avoid any clumping.
- 2. Meanwhile, add the berries to a saucepan with a splash of water and heat over a low flame until softened.
- 3. After the chia pudding has set, top with warm berries, extra yoghurt, fruit and granola as desired.
